      So many people have an aversion to pimento cheese and based on the mush that comes prepackaged, I don’t blame them!!!  This recipe is nothing like the gooey stuff you get already made.  I almost hate to compare it to pimento cheese for that very reason.  So, I actually started using roasted red peppers and we don’t even have to use the word pimento!!!  Having said that…  I promise you are going to love this cheese!!!   We eat it with crackers or fresh-cut vegetables.  It is even good to stuff into peppers as an appetizer!!!

 

Ingredients list:

1- 8 ounce block pepper jack cheese, hand grated

1 – 8 ounce block extra sharp cheddar cheese, hand grated

1 – 8 jar of roasted red bell peppers, chopped fine(reserve the liquid)

10 pepperoncini peppers, chopped fine

3 –  green onions, chopped fine

1 – HEAPING tablespoon of Dukes mayonnaise (I have said it before and I’ll say it again…  It does not have sugar and I LIKE that!!!)

Lots of freshly ground black pepper(optional)

With a hand grater, grate both of the cheeses in a large bowl.  PLEASE do not put the cheeses in a food processor unless you have the blade that will grate it like the hand grater.  The regular blade on a food processor pulverizes it and I can not be responsible for this mess!!!   Pour the reserved liquid into the bowl with the cheeses.  Add the roasted red bell peppers, pepperoncini peppers, and green onions.  Using the liquid from the peppers is not only delicious but it adds some liquid and you don’t have to use as much mayo.    Add the mayonnaise and black pepper and blend well.  If you need more mayonnaise you can add it but don’t get carried away here.  If you must go easy at first.  Let it sit in the fridge for and hour or so and then if you still feel the need to add then you can do it here.

 Serve and enjoy

 Hint, Hint:  Make a grilled cheese sandwich with this cheese… Mmmmmm!!!

    I WILL make this soon! Only problem is I am afraid of how much I will eat because I love “homemade” pimento cheese and this recipe looks so much better! Roasted red peppers are my favorite to! Thanks for the recipe!
