      Honestly, I have gone through 100’s of recipes for Baba Ghanoush!!!!  Until today, I would have told you it wasn’t my favorite!!!  Today, I decided to put it all aside….  I mean ….  Come on….  I know how to make really good hummus….  How can this be that different????   The out come was the best Baba Ghanoush I have ever had!!!   Here is what I did…


Ingredients list:

2 med. eggplant

Olive oil

Olive oil spray

Juice of a lemon ( aprox. 1/4 cup)

1 1/2 tsp kosher salt

1 tsp coarse ground black pepper

1 1/2 tsp cumin

1 tsp onion powder

1 TBS minced garlic

1 ladle thaini( this is aprox. 1/3 cup)

1/4 cup extra virgin olive oil


Cooking Instructions:

Pre heat your oven to 400 degrees.  Cover a baking sheet with aluminum foil.  Cut the eggplant in half lengthwise and place flesh side up on the baking sheet.  Score the eggplant diagonally (Both directions).  Generously rub the top of the eggplant with olive oil.  When oven has preheated, place in the oven for approximately 40 minutes or until flesh is fork tender.    About 1/2 way through, check it…  You may need to spray the tops of the eggplant with some olive oil spray.  When done, allow to cool for about 20 minutes.


Scrape off the flesh of the eggplant into your food processor.  Add the lemon juice,  salt, pepper, cumin, and onion powder.  Blend well…  Add the tahini and continue to blend…  Gradually add the olive oil through the feed tube.  Taste and adjust salt and pepper if necessary.  Distribute onto a serving dish and garnish with chopped fresh parsley, drizzle of olive oil, and sumac.  Serve with fresh pita, chips, or fresh vegetables.
