Just found out friends are stopping by for a glass of wine???  Need to pull out something quick as just a little something to nick nack on???  Here is your answer!  Thank you to my friend Bill for turning me on to this simple, delicious, easy, healthy appetizer.  Why didn’t I think of this?  It seems like a no brainer and is one of my favorite appetizers now.  I try and keep avocados on hand and some good kalamata olives for this very reason.


Ingredients List:


Avocado (Depends on how many friends…  if it is just 4 of you, 2 is plenty)

Fresh squeezed  juice from 1/4 of a lemon

Drizzle of extra virgin olive oil

sprinkle of kosher salt

sprinkle of cracked black pepper


Cut the avocado in half lengthwise.  Give the pit a good “whack” with a paring knife.  Turn the knife and the pit should come right out.   Discard the pit.  Use a spoon to gently remove the avocado from the peel.  Place each half, pitted side down on a plate.  Slice through each side of the avocado about 4 times in each direction (sort of cubing it).  Squirt the juice of the lemon wedge over the avocado halves.  Drizzle them with olive oil.  Sprinkle on and salt and pepper and you are good to go!
