Zucchini Noodles

 I have posted these “noodles” before… but these make a great side dish.  My guilty pleasure of eating pasta!  I LOVE pasta but when you try to eat relatively carb free, it is almost impossible!  Well, not now… but you have to invest in one of these turning slicers, which is well worth it!  Makes you feel like you are eating PASTA!!!!!

3 medium/ large zucchini – Turned on the slicer, medium blade to make the pasta

3 TBS olive oil ( i use extra virgin)

2 pinches salt

1 pinch corse ground black pepper

small pinch red pepper flakes

Juice of a lemon

1/2 cup chopped green onions

 

Heat the olive oil over high heat.  Cook for literally 1 minute.  Add the salt, pepper, and lemon juice.  Coat well and drain in a colander.  Stir in the green onions.  Mix well and serve.

Just an update…  Tonight I made these noodles and used zucchini and yellow squash, tossed in a little red pepper for color.  It was beautiful presentation and equally delicious!!!  Here is a picture…
