Indian Spiced Grilled Lamb Chops

 Flavor, Flavor, Flavor…..  I think Indian has become one of my favorite ethnic cuisines!  I did these lamb chops today along side an Indian chick pea dish, chana masala, and I AM IN LOVE!!!!!  As with the chana masala, I combed through authentic Indian recipes picking out the ingredients I thought we would like best.  Here is what I came up with and it was certainly satisfying!!!

 Ingredients list:

Juice of 4 limes

5 TBS canola oil

1 TBS cumin

1 TBS coriander

1 TBS ginger powder

1 TBS onion powder

1 1/2 tsp curry powder

1 1/2 tsp kosher salt

1 1/2 tsp curry powder

3/4 tsp coarse ground black pepper

1/4 cup chopped fresh cilantro

6 – bone in lamb chops

extra kosher salt

Marinade:

Mix everything from the limes down to the cilantro in a mixing bowl.  Mix until well blended.

Put the lamb chops in a gallon freezer bag.  Pour in the marinade. Massage the marinade into the chops.  Put it in the fridge and let it marinate for 2 hours.  Take them out of the refrigerator and let them sit out at room temperature for about 45 minutes.   You can grill these ouside but with heat we haave going on in Mississippi right now, I used my stove top grill…. Spray a cast iron stove top grill with olive oil no stick.  Place it over two burners both on high.  When hot,  grill the chops for 3 minutes on each side, basting with the liquid from the bag.  This results in a rare chop.  If you want it medium, go about another minute on each side.  Any longer will result in an over cooked lamb chop and I can’t talk about over cooked lamb…not good!  These chops are delicious and paired with that Indian Chana Masala that I just gave you the recipe for is delicious!!!  My new favorite!
