Grilled Lettuce Salad

 This is a great change from “just” a salad.  Yesterday, I was lucky enough that my local grocery store had a variety of “whole” heads of baby lettuce.  I jumped on the opportunity to get to make one of my favorite salads… grilled salad!  Of course, I had “THE” dressing already made in my fridge since it is the “house” dressing.  I tossed on some blue cheese crumbles and had I been thinking…  some craisins and some chopped walnuts would have been a great addition.  BUT…..I didn’t do that and it was still delicious!

Ingredients Lists:

4 – varieties of “whole” heads of baby lettuce.  Mine came in a pack of 4 and included arugula, red bibb lettuce, green bibb lettuce,and a “curly” purple leaf lettuce.

Grape or cherry tomatoes, cut in half (you decide how many)

3 – green onions, chopped

1/4 cup bleu cheese crumbles

balsamic ginger dressing



Cut the heads of lettuce in half.  Gently rinse them under cold water and let them drain thoroughly.  If you are using a regular grill you will have to consult my husband!  (Confession)… My extent of grilling involves using my cast iron stove top grill…but… you can prepare these on an outside grill!  Spray the stove top grill with olive oil spray and heat over two burners on high heat.  Place the lettuce heads on the grill, cut side down.  Let the lettuce wilt slightly and get a few grill marks.  This takes about one minute.  Place the lettuce halves on a serving platter.  Top with the tomatoes, green onions, blue cheese, and dressing.
