Low Calorie Tuna Salad

(Without Sacrificing Flavor)

I have to admit that I am somewhat of a snob when it comes to tuna.  I have probably told you that I only use fresh tuna that I poach when making tuna salad and that canned tuna will just not do!!!  Well, there is nothing like fresh…BUT…  I was searching through my pantry trying to conjure up something for lunch and realized that I had some canned albacore tuna packed in water.  Hmmmm…The thought came to me that I didn’t used to be so snobby about tuna salad and it was always good!  We have been watching calories over the past few weeks so I thought I would give it another chance and actually count the calories in the entire dish so that I would know what I was eating.  I also decided to cut some calories by not using so much mayonnaise and substitute a little sour cream.  The results were VERY good and I was surprised at how few calories were in it!!!  Give it a try the next time you trying to trim off a few extra pounds!  I don’t think you will be disappointed at all!  Here is what I did!!!

4 – 5 ounce cans of white albacore tuna in water, drained.  Calories: 140/ can

Anyone who is familiar with fresh eggs is aware that they are hard to peel.  A friend recently discovered a site that gave the perfect instructions to beautifully peeled fresh eggs.  We like ours soft boiled but they give instructions for medium and hard boiled as well!!!  Thank you http://blog.eggzy.net/ !!!!!
